Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 0.5 yellow onion (medium, chopped)
- 1 teaspoon ground cumin
- 0.5 teaspoon chili powder (mild)
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 can black beans (rinsed and drained)
- 6 ounce tortilla chips
- 1.5 cup shredded cheddar cheese
- 0.5 cup salsa (mild)
- 0.25 cup sour cream
Instructions
- Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Add 1 pound of ground beef and 1/2 of a chopped yellow onion. Cook, breaking up the beef, until browned and the onion is softened, about 5-7 minutes. Drain any excess fat.
- Stir in 1 teaspoon of ground cumin, 1/2 teaspoon of mild chili powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Add 1 rinsed and drained can of black beans and cook for 2 minutes, stirring to combine.
- Spread 6 ounces of tortilla chips in an even layer over the beef and bean mixture in the skillet. Top generously with 1 1/2 cups of shredded cheddar cheese.
- Cover the skillet (if it has a lid) or place it under a broiler for 1-2 minutes until the cheese is melted and bubbly. Alternatively, place the skillet in a 375 degree F oven for 5-7 minutes.
- Remove from heat and serve immediately, with mild salsa and sour cream on the side if desired.
Notes
Use an oven-safe skillet or transfer chips, beef mixture, and cheese to a baking dish before broiling/baking for best results.
