Ingredients
- 3.5 cup mashed potatoes
- 1 pound chicken (shredded)
- 8 ounce uncured ham (diced)
- 0.5 white onion (diced)
- 0.5 green bell pepper (diced)
- 1 cup corn kernels (drained)
- 2 tablespoon olive oil
- 0.25 cup mayonnaise
- 0.25 cup Greek yogurt
- 1 tablespoon sriracha
- 0.5 teaspoon garlic powder
- 1 dash salt (to taste)
- 1 cup Cheddar jack cheese (shredded)
- 0.25 cup Parmesan cheese (shredded)
- 2 Roma tomatoes (diced)
- 2 tablespoon green onion (chopped)
Instructions
- Heat olive oil in a large skillet or oven-safe pan over medium heat. Add diced uncured ham, diced white onion, diced green bell pepper, and corn kernels. Sauté for 5-7 minutes, until the ham is slightly crispy and vegetables are tender-crisp.
- Add shredded chicken to the skillet and cook for another 2-3 minutes, stirring, until heated through.
- In a small bowl, whisk together mayonnaise, Greek yogurt, sriracha, garlic powder, salt, and black pepper. Pour the sauce over the chicken and vegetable mixture in the skillet. Stir to combine and heat for 1-2 minutes until warmed through.
- If your mashed potatoes are cold, warm them in the microwave or a separate saucepan. Divide the warm mashed potatoes evenly among 4 serving bowls or directly over the chicken mixture in the oven-safe pan.
- Top each bowl or the skillet mixture with shredded Cheddar jack cheese and shredded Parmesan. If using an oven-safe pan, you can briefly broil for 1-2 minutes until the cheese is melted and bubbly. Otherwise, the residual heat will melt the cheese.
- Garnish with diced Roma tomato and chopped green onion before serving.
