Ingredients
- 1 pound ground beef
- 0.5 yellow onion (medium, diced)
- 1 teaspoon chili powder
- 0.5 teaspoon ground cumin
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 can black beans (rinsed and drained)
- 1 can corn (drained)
- 1 package tortilla chips
- 2 cup cheddar cheese
- 0.5 cup sour cream
- 0.25 cup fresh cilantro (chopped)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium-high heat, cook the ground beef and diced yellow onion until the beef is browned and the onion is softened, about 6-8 minutes. Drain any excess fat.
- Stir in the chili powder, ground cumin, salt, and black pepper. Cook for 1 minute more until fragrant. Add the rinsed and drained black beans and drained corn, stirring to combine and heat through.
- Spread a layer of tortilla chips on a large baking sheet. Top with half of the beef mixture and half of the shredded cheddar cheese. Repeat with another layer of chips, the remaining beef mixture, and cheese.
- Bake for 8-10 minutes, or until the cheese is melted and bubbly. Garnish with sour cream and fresh cilantro before serving.
