Loaded Beef Nacho Plate

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium-high heat, cook the ground beef and diced yellow onion until the beef is browned and the onion is softened, about 6-8 minutes. Drain any excess fat.
  3. Stir in the chili powder, ground cumin, salt, and black pepper. Cook for 1 minute more until fragrant. Add the rinsed and drained black beans and drained corn, stirring to combine and heat through.
  4. Spread a layer of tortilla chips on a large baking sheet. Top with half of the beef mixture and half of the shredded cheddar cheese. Repeat with another layer of chips, the remaining beef mixture, and cheese.
  5. Bake for 8-10 minutes, or until the cheese is melted and bubbly. Garnish with sour cream and fresh cilantro before serving.
