Ingredients
- 1 pound pulled pork (pre-cooked)
- 2 cup macaroni and cheese (prepared)
- 15 ounce corn kernels (drained)
- 15 ounce baked beans
- 14.5 ounce diced tomatoes (lightly drained)
- 4 ounce diced green chile peppers
- 1 cup sharp cheddar cheese (shredded)
- 0.5 red onion (diced)
- 2 green onions (sliced)
- 1 tablespoon olive oil
- 1 pinch salt (to taste)
- 1 pinch black pepper (to taste)
Instructions
- Preheat your broiler to high. In a medium saucepan over medium heat, gently warm the pulled pork for 5-7 minutes, stirring occasionally, until heated through. Set aside.
- In a separate pot or microwave-safe bowl, heat the prepared macaroni and cheese until warm, about 3-5 minutes on the stovetop or according to package directions.
- While the pork and mac and cheese are warming, in a medium bowl, combine the drained corn kernels, baked beans, lightly drained diced tomatoes, and diced green chile peppers. Stir in half of the diced red onion and season with salt and black pepper to taste.
- Evenly divide the warm macaroni and cheese among 4 individual oven-safe bowls or a small oven-safe casserole dish. Top with the warm pulled pork, then spoon the bean and veggie mixture over the pork.
- Sprinkle the shredded sharp cheddar cheese generously over each bowl. Place under the preheated broiler for 2-3 minutes, or until the cheese is melted and bubbly. Watch carefully to prevent burning.
- Carefully remove the bowls from the broiler. Garnish with the sliced green onions and the remaining diced red onion before serving.
Notes
For faster reheating, the pulled pork and mac and cheese can be warmed in the microwave.
