  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound shrimp and cook for 1-2 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
  2. Add 0.5 medium red onion to the same skillet and cook for 2-3 minutes until softened. Stir in 1 teaspoon fresh ginger and 2 cloves garlic, cooking for 30 seconds until fragrant.
  3. Add 1/2 teaspoon ground turmeric and 1/2 teaspoon red pepper flakes. Cook for 30 seconds, stirring.
  4. Add 5 ounces fresh spinach to the skillet. Cook, stirring, until spinach is wilted, about 2-3 minutes.
  5. Return the cooked shrimp to the skillet. Stir in the juice from half a lime. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper, or to taste. Toss to combine.
  6. Serve immediately with a tablespoon of mango chutney on the side. Garnish with fresh cilantro and a lime wedge, if desired.

Notes

Shrimp cook very quickly, so be careful not to overcook them, or they will become rubbery. If you don't have mango chutney, a spoonful of any fruit preserve or a squeeze of orange juice can offer a similar sweet-tangy contrast.
