  1. Finely dice 1/4 of a yellow onion, mince 1 clove garlic, and grate 1 teaspoon fresh ginger. Separate the leaves from 1 head of butter lettuce.
  2. In a large skillet, cook 1 pound ground beef over medium heat, breaking it apart with a spoon. Drain any excess fat.
  3. Add the diced yellow onion, minced garlic, and grated fresh ginger to the skillet. Cook for 3-4 minutes until the onion softens and the beef is fully browned.
  4. Stir in 2 tablespoons sugar-free soy sauce, 1 tablespoon rice vinegar, and 1 teaspoon sesame oil. Season with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Cook for another 1-2 minutes to allow the flavors to meld.
  5. Serve the beef mixture in the butter lettuce cups. Garnish with optional 1 tablespoon sesame seeds.

Notes

For a little crunch, add 2 tablespoons of chopped water chestnuts to the beef mixture during the last minute of cooking.
