Ingredients
- 1 pound ground beef (80/20 lean)
- 0.25 yellow onion (finely diced)
- 1 clove garlic (minced)
- 1 teaspoon fresh ginger (grated)
- 2 tablespoon sugar-free soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 head butter lettuce (leaves separated)
- 1 tablespoon sesame seeds
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper (freshly ground)
Instructions
- Finely dice 1/4 of a yellow onion, mince 1 clove garlic, and grate 1 teaspoon fresh ginger. Separate the leaves from 1 head of butter lettuce.
- In a large skillet, cook 1 pound ground beef over medium heat, breaking it apart with a spoon. Drain any excess fat.
- Add the diced yellow onion, minced garlic, and grated fresh ginger to the skillet. Cook for 3-4 minutes until the onion softens and the beef is fully browned.
- Stir in 2 tablespoons sugar-free soy sauce, 1 tablespoon rice vinegar, and 1 teaspoon sesame oil. Season with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Cook for another 1-2 minutes to allow the flavors to meld.
- Serve the beef mixture in the butter lettuce cups. Garnish with optional 1 tablespoon sesame seeds.
Notes
For a little crunch, add 2 tablespoons of chopped water chestnuts to the beef mixture during the last minute of cooking.
