  1. Cook linguine according to package directions until al dente. Drain and set aside, reserving 1/4 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken breast pieces and cook for 4-6 minutes, until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add finely chopped yellow onion to the skillet and cook for 2-3 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Pour in the chicken broth, heavy cream, lemon juice, dried oregano, salt, and black pepper. Bring to a gentle simmer and cook for 2-3 minutes, stirring occasionally, until the sauce slightly thickens.
  5. Return chicken breast to the skillet. Add the cooked linguine and fresh spinach to the sauce, tossing to combine. Cook for 1-2 minutes until spinach is wilted and pasta is fully coated. If the sauce is too thick, add a splash of reserved pasta water.
  6. Serve immediately, topped with grated Parmesan cheese if desired.

Notes

You can add other quick-cooking vegetables like frozen peas or chopped asparagus during the last few minutes of sauce simmering.
