- 6 ounce chicken breast (boneless, skinless, cut into 1-inch pieces)
- 1 tablespoon olive oil
- 0.25 cup yellow onion (finely chopped)
- 1 clove garlic (minced)
- 0.5 cup chicken broth
- 0.25 cup heavy cream
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 0.25 teaspoon salt
- 0.125 teaspoon black pepper
- 4 ounce linguine
- 2 cup fresh spinach
- 2 tablespoon grated Parmesan cheese (for serving)
Instructions
- Cook linguine according to package directions until al dente. Drain and set aside, reserving 1/4 cup of pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken breast pieces and cook for 4-6 minutes, until browned and cooked through. Remove chicken from skillet and set aside.
- Add finely chopped yellow onion to the skillet and cook for 2-3 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
- Pour in the chicken broth, heavy cream, lemon juice, dried oregano, salt, and black pepper. Bring to a gentle simmer and cook for 2-3 minutes, stirring occasionally, until the sauce slightly thickens.
- Return chicken breast to the skillet. Add the cooked linguine and fresh spinach to the sauce, tossing to combine. Cook for 1-2 minutes until spinach is wilted and pasta is fully coated. If the sauce is too thick, add a splash of reserved pasta water.
- Serve immediately, topped with grated Parmesan cheese if desired.
Notes
You can add other quick-cooking vegetables like frozen peas or chopped asparagus during the last few minutes of sauce simmering.
