  1. Heat 2 tablespoons olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Season the chicken breast pieces with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Add the seasoned chicken to the hot skillet and cook until lightly browned on all sides, about 4-5 minutes. Remove chicken from skillet and set aside.
  2. Add the chopped carrot and green beans to the same skillet. Sauté for 3-4 minutes until slightly tender-crisp.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the uncooked brown rice, remaining 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1 1/2 teaspoons dried oregano, and 1 1/2 teaspoons dried thyme to the skillet. Stir to combine with the vegetables and toast for 1 minute.
  5. Pour in 2 cups low-sodium chicken broth and the juice from 1 lemon. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until the brown rice is tender and the liquid is absorbed.
  6. Return the cooked chicken breast to the skillet, gently stirring to combine with the rice and vegetables. Cover and let sit for 5 minutes to allow flavors to meld and chicken to warm through.
  7. Garnish with fresh parsley if desired before serving.
