Instructions
- Heat 2 tablespoons olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Season the chicken breast pieces with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Add the seasoned chicken to the hot skillet and cook until lightly browned on all sides, about 4-5 minutes. Remove chicken from skillet and set aside.
- Add the chopped carrot and green beans to the same skillet. Sauté for 3-4 minutes until slightly tender-crisp.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the uncooked brown rice, remaining 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1 1/2 teaspoons dried oregano, and 1 1/2 teaspoons dried thyme to the skillet. Stir to combine with the vegetables and toast for 1 minute.
- Pour in 2 cups low-sodium chicken broth and the juice from 1 lemon. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until the brown rice is tender and the liquid is absorbed.
- Return the cooked chicken breast to the skillet, gently stirring to combine with the rice and vegetables. Cover and let sit for 5 minutes to allow flavors to meld and chicken to warm through.
- Garnish with fresh parsley if desired before serving.
