  1. First, prepare your garlic rice: Combine 1 1/2 cups uncooked white rice with 3 cups water or chicken broth, 2 minced garlic cloves (from the 4 cloves total), 1/2 teaspoon salt, and 1/4 teaspoon black pepper in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until water is absorbed and rice is tender. Keep covered off the heat while you prepare the skillet meal.
  2. While the rice cooks, heat 1 tablespoon olive oil in a large skillet or non-stick pan over medium-high heat. Season the chicken breast pieces with the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  3. Add the seasoned chicken to the hot skillet and cook for 5-7 minutes, stirring occasionally, until browned on all sides and mostly cooked through. Transfer chicken to a plate and set aside.
  4. Add the remaining 2 minced garlic cloves and 1 teaspoon dried oregano to the same skillet (add a splash more olive oil if needed). Cook for 30 seconds until fragrant.
  5. Stir in 1 1/2 pounds broccoli florets and 1 cup low-sodium chicken broth. Bring to a simmer, then cover and cook for 5-7 minutes, or until the broccoli is tender-crisp.
  6. Return the cooked chicken to the skillet with the broccoli. Squeeze the juice of half of the lemon over the mixture. Stir to combine and heat through for 1-2 minutes.
  7. Serve the Lemony Chicken & Broccoli Skillet immediately over the garlic rice. Garnish with lemon slices and optional chopped fresh parsley, if desired.

Notes

Leftovers store well in an airtight container for up to 3 days. To reheat, microwave until warmed through or gently warm in a skillet with a splash of water or broth.
