Ingredients
- 1 pound ground turkey
- 8 ounce rice noodles
- 1 tablespoon garlic-infused olive oil
- 2 tablespoon lemongrass (tender inner core minced)
- 1 tablespoon fresh ginger (minced)
- 1 red bell pepper (thinly sliced)
- 3 tablespoon gluten-free tamari
- 1 tablespoon maple syrup
- 0.5 cup scallion greens (green parts only, chopped)
Instructions
- Place rice noodles in a large heatproof bowl and cover with boiling water. Soak 6 to 8 minutes until tender, then drain and set aside.
- Heat garlic-infused olive oil in a large skillet over medium-high heat. Add ground turkey, breaking it up for 5 minutes until starting to brown.
- Add minced lemongrass, minced ginger, and sliced red bell pepper. Cook 4 to 5 minutes until bell pepper is tender-crisp and turkey is thoroughly cooked to 165°F.
- Stir in gluten-free tamari, pure maple syrup, drained rice noodles, and scallion greens. Toss gently over medium heat for 2 minutes until hot and coated.
Notes
Using the tender pale inner core of lemongrass provides incredible citrus aroma with zero toughness.
