  1. Cook the egg noodles according to package directions. Drain and set aside.
  2. While noodles cook, in a small bowl, whisk together the soy sauce, brown sugar, lemongrass paste, and optional sriracha. Set aside.
  3. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the chicken breast strips and stir-fry until cooked through and lightly browned, about 5-7 minutes. Remove chicken from the skillet and set aside.
  4. Add the sliced red bell pepper, sliced yellow onion, and snap peas to the skillet. Stir-fry for 3-5 minutes, until vegetables are tender-crisp. Add the minced garlic and grated fresh ginger and stir-fry for 1 minute more until fragrant.
  5. Return the cooked chicken and noodles to the skillet with the vegetables. Pour the sauce over everything and toss to combine, cooking for 1-2 minutes until heated through and coated.
  6. Serve immediately, garnished with fresh cilantro if desired.

Notes

You can add other vegetables like shredded carrots, mushrooms, or baby corn for more variety. Adjust sriracha to your preferred spice level.
