- 1 cup couscous
- 1 teaspoon olive oil
Instructions
- Cook the couscous according to package directions, typically by combining 1 cup dry couscous with 1 cup boiling water or chicken broth, 1 teaspoon olive oil, and a pinch of salt. Cover and let stand for 5 minutes, then fluff with a fork.
- While couscous cooks, season the chicken cutlets with 1/4 teaspoon salt and 1/4 teaspoon black pepper.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and cook for 3-4 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
- Add asparagus to the same skillet. Sauté for 3-4 minutes until tender-crisp. Add minced garlic and cook for 1 more minute until fragrant.
- Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet. Bring to a simmer. Return chicken to the skillet and sprinkle with fresh thyme. Cook for 1-2 minutes until chicken is heated through and sauce slightly thickens.
- Serve the skillet chicken and asparagus alongside the fluffy couscous.

Ensure chicken cutlets are thin to cook quickly. You can adjust the amount of lemon juice to your taste.
