Lemon-Thyme Chicken Breasts

Tender sautéed chicken cutlets infused with lemon and fresh thyme, served over seasoned brown lentils and tender broccoli florets.

  1. Season the chicken breast cutlets on both sides with 1/4 teaspoon of the salt, the garlic powder, the black pepper, and half of the fresh thyme.
  2. Heat 1 tablespoon of avocado oil in a large nonstick skillet over medium-high heat. Add the chicken cutlets and cook for 4 to 5 minutes per side until golden and the internal temperature reaches 165°F.
  3. Transfer the chicken to a plate, drizzle with 1 tablespoon of lemon juice, and tent loosely with foil to rest.
  4. In the same skillet, add the remaining 1 tablespoon of avocado oil, the broccoli florets, and 1/4 cup of water. Cover and steam over medium heat for 4 minutes until the broccoli is crisp-tender.
  5. Stir in the brown lentils, the remaining 1/4 teaspoon of salt, remaining fresh thyme, and remaining 1 tablespoon of lemon juice. Warm through for 2 to 3 minutes before serving alongside the chicken.

Notes

Rinsing the canned lentils removes excess surface starch and keeps the sodium level exceptionally low.
