Ingredients
- 1.5 pound chicken breast (boneless, skinless, sliced into cutlets)
- 2 can brown lentils (rinsed and drained)
- 5 cup broccoli florets (cut into bite-sized pieces)
- 2 tablespoon avocado oil
- 2 tablespoon lemon juice (freshly squeezed)
- 1 tablespoon fresh thyme (stemmed and minced)
- 0.5 teaspoon garlic powder
- 0.5 teaspoon salt
- 0.25 teaspoon ground black pepper
Instructions
- Season the chicken breast cutlets on both sides with 1/4 teaspoon of the salt, the garlic powder, the black pepper, and half of the fresh thyme.
- Heat 1 tablespoon of avocado oil in a large nonstick skillet over medium-high heat. Add the chicken cutlets and cook for 4 to 5 minutes per side until golden and the internal temperature reaches 165°F.
- Transfer the chicken to a plate, drizzle with 1 tablespoon of lemon juice, and tent loosely with foil to rest.
- In the same skillet, add the remaining 1 tablespoon of avocado oil, the broccoli florets, and 1/4 cup of water. Cover and steam over medium heat for 4 minutes until the broccoli is crisp-tender.
- Stir in the brown lentils, the remaining 1/4 teaspoon of salt, remaining fresh thyme, and remaining 1 tablespoon of lemon juice. Warm through for 2 to 3 minutes before serving alongside the chicken.
Notes
Rinsing the canned lentils removes excess surface starch and keeps the sodium level exceptionally low.
