  1. Pat white fish fillets dry with paper towels and season with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
  2. In a small bowl, whisk together the juice of half a lemon, 1 tablespoon chopped fresh parsley, and dried dill. Set aside.
  3. Heat 1 tablespoon olive oil in a large non-stick skillet over medium-high heat. Once hot, carefully place the seasoned fish fillets in the skillet. Sear for 4-5 minutes per side, until golden brown and cooked through.
  4. While the fish cooks, combine the diced cucumber and halved cherry tomatoes in a medium bowl. Whisk together the remaining 1 tablespoon chopped fresh parsley, red wine vinegar, 1/4 teaspoon salt, and 1/8 teaspoon black pepper to create a quick salad dressing. Pour over the cucumber and tomatoes, tossing to combine.
  5. Remove cooked fish from the skillet and drizzle with the lemon-dill mixture. Serve immediately with the cucumber and tomato salad on the side and a lemon slice for garnish.

Notes

Any firm white fish like cod or tilapia works well for this recipe.
