  1. Preheat your oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the quartered red potatoes, trimmed green beans, olive oil, minced garlic, dried Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss until everything is well coated.
  3. Arrange the seasoned vegetables on one side of the prepared baking sheet.
  4. Pat the boneless, skinless chicken thighs dry with paper towels. In the same bowl (no need to wash), add the chicken thighs and toss with a splash more olive oil and a pinch of salt and pepper. Arrange the chicken thighs on the other side of the baking sheet with the vegetables.
  5. Roast for 25 to 30 minutes, or until the chicken thighs are cooked through (internal temperature reaches 165 degrees Fahrenheit) and the vegetables are tender.
  6. Serve immediately, with lemon wedges for squeezing over the chicken and vegetables if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.
