  1. Season the pork chops evenly with the dried oregano, dried thyme, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the seasoned pork chops and cook for 4-6 minutes per side, until golden brown and cooked through (internal temperature of 145°F). Remove pork chops from skillet and set aside to rest, drizzling with fresh lemon juice.
  3. While the pork cooks, prepare the asparagus. Toss the trimmed asparagus with the remaining 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Roast in a preheated 400°F oven or pan-sear in another skillet for 8-10 minutes, until tender-crisp.
  4. Prepare the instant mashed potatoes according to package directions, substituting plant-based margarine and unsweetened plain almond milk for butter and dairy milk. Stir in the minced garlic while mashing for a garlicky flavor.
  5. Serve the Lemon-Herb Pork Chops with the garlic mashed potatoes and roasted asparagus.

Notes

For best flavor, allow the pork chops to rest for a few minutes before serving to retain their juices. Any remaining mashed potatoes can be stored in the refrigerator.
