  1. In a medium bowl, combine the cubed chicken breast with 1 tablespoon of olive oil, the lemon juice, dried oregano, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss to coat and let marinate for 5-10 minutes while preparing other components.
  2. Prepare the tzatziki: In a small bowl, combine the Greek yogurt, grated English cucumber, minced garlic, fresh dill, white vinegar, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Stir well and set aside.
  3. Thread the marinated chicken onto skewers. Heat the remaining 2 tablespoons of olive oil in a large skillet or grill pan over medium-high heat. Cook the chicken skewers for 4-5 minutes per side, or until cooked through and nicely browned.
  4. While the chicken cooks, warm the pita bread in a dry skillet over medium heat for 30 seconds to 1 minute per side, or microwave for 15-20 seconds until soft and pliable.
  5. Serve the hot chicken skewers immediately with the fresh tzatziki and warm pita bread.

Notes

If using wooden skewers, soak them in water for at least 15 minutes before threading to prevent burning.
