Instructions
- Cook the brown rice: Combine 3 cups uncooked brown rice and 4 1/2 cups water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until water is absorbed. Alternatively, use a rice cooker according to manufacturer’s instructions.
- While rice cooks, prepare chicken: Pat chicken breast dry with paper towels. Slice the chicken breasts horizontally to create thinner cutlets, about 1/2-inch thick. This ensures quick and even cooking.
- Season the chicken: In a small bowl, combine 1 teaspoon dried oregano, 1 teaspoon dried thyme, and 1/2 teaspoon kosher salt. Sprinkle this seasoning evenly over both sides of the chicken cutlets.
- Sear the chicken: Heat 1 tablespoon olive oil in a large skillet or non-stick pan over medium-high heat. Once hot, add the seasoned chicken cutlets in a single layer (cook in batches if necessary to avoid overcrowding). Cook for 3-4 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F).
- Deglaze and finish chicken: Squeeze the juice from one lemon over the cooked chicken. Add the lemon slices to the pan and let them warm briefly. Transfer chicken and lemon slices to a plate, cover loosely with foil, and let rest.
- Steam green beans: While chicken rests, bring about 1/2 inch of water to a boil in the same skillet (or a separate pot) with a steamer basket. Add 1 1/2 pounds trimmed fresh green beans, cover, and steam for 5-7 minutes, or until tender-crisp.
- Serve: Divide the cooked brown rice among 9 plates. Top with the lemon herb chicken and steamed green beans. Garnish with chopped fresh parsley, if desired. Leftovers can be stored in an airtight container for up to 3 days.
