Lemon-Herb Braised Cod

Ingredients
- 1.5 pound cod fillet (cut into 4 portions)
- 1 pound baby gold potatoes (halved)
- 12 ounce green beans (trimmed)
- 1 tablespoon olive oil (extra virgin)
- 2 cup vegetable broth (low sodium)
- 2 lemons (1 juiced, 1 sliced thin)
- 3 clove garlic (minced)
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 0.5 teaspoon black pepper (ground)
- 0.25 cup flat-leaf parsley (finely chopped)
Instructions
- Heat olive oil in a large deep skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
- Pour in vegetable broth, lemon juice, dried oregano, 1/2 teaspoon of the salt, and 1/4 teaspoon of the black pepper. Add halved baby gold potatoes, bring to a boil, then reduce heat to medium-low, cover, and simmer for 10 minutes until potatoes begin to soften.
- Season cod fillets evenly with the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper. Arrange the cod fillets and trimmed green beans in the skillet around the potatoes.
- Top the fish with lemon slices. Cover the skillet tightly and simmer over medium-low heat for 7 to 9 minutes, until the cod is opaque and flakes easily with a fork and the green beans are tender-crisp.
- Garnish with freshly chopped flat-leaf parsley and ladle the fish, vegetables, and warm lemon broth evenly into four shallow bowls.
Notes
Haddock or pollock makes an excellent economical substitute for cod.
