Instructions
- Preheat oven to 400°F. Line a small baking sheet with parchment paper or foil.
- Place 5 ounces cod fillet on the prepared baking sheet. Drizzle with 1 tablespoon olive oil and 1 teaspoon lemon juice. Season with 1/2 teaspoon dried oregano, 1/4 teaspoon garlic powder, salt, and black pepper. Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
- While fish bakes, prepare the couscous: In a heatproof bowl, combine 1/2 cup quick-cooking couscous with 3/4 cup hot water or vegetable broth. Cover tightly with a lid or plastic wrap and let stand for 5 minutes, or until the liquid is absorbed. Fluff with a fork.
- Sauté the spinach: Heat 1 teaspoon olive oil in a small skillet over medium heat. Add 2 cups fresh spinach and cook for 2-3 minutes, stirring, until wilted. Season with a pinch of salt and pepper.
- Serve the baked cod immediately with the fluffy couscous and sautéed spinach.
