  1. Heat the olive oil in a large skillet over medium-high heat. Add the peeled and deveined shrimp and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp from the skillet and set aside.
  2. Add the minced garlic and halved cherry tomatoes to the same skillet. Cook for 2-3 minutes, stirring occasionally, until tomatoes begin to soften and burst.
  3. Stir in the chicken broth and fresh lemon juice, scraping up any browned bits from the bottom of the pan. Bring to a light simmer.
  4. Add the spiralized zucchini noodles to the skillet. Cook for 2-3 minutes, tossing with tongs, until the 'zoodles' are slightly softened but still retain a bite. Be careful not to overcook them.
  5. Return the cooked shrimp to the skillet with the 'zoodles' and sauce. Stir in the chopped fresh parsley. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper, or to taste.
  6. Serve immediately. Top with grated Parmesan cheese if desired.

Notes

If you don't have a spiralizer, you can use pre-packaged zucchini noodles from the produce section or thin spaghetti pasta instead. Adjust the cooking time for the zoodles to your preferred texture.
