Ingredients
- 1 tablespoon olive oil
- 1 pound shrimp (large, peeled and deveined)
- 2 clove garlic (minced)
- 1 pint cherry tomatoes (halved)
- 0.25 cup chicken broth
- 2 tablespoon fresh lemon juice
- 2 tablespoon fresh parsley (chopped)
- 0.5 teaspoon salt (or to taste)
- 0.25 teaspoon black pepper (or to taste)
- 2 zucchinis (medium, spiralized into 'zoodles' (about 4 cups))
- 0.25 cup Parmesan cheese (grated, for serving)
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the peeled and deveined shrimp and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp from the skillet and set aside.
- Add the minced garlic and halved cherry tomatoes to the same skillet. Cook for 2-3 minutes, stirring occasionally, until tomatoes begin to soften and burst.
- Stir in the chicken broth and fresh lemon juice, scraping up any browned bits from the bottom of the pan. Bring to a light simmer.
- Add the spiralized zucchini noodles to the skillet. Cook for 2-3 minutes, tossing with tongs, until the 'zoodles' are slightly softened but still retain a bite. Be careful not to overcook them.
- Return the cooked shrimp to the skillet with the 'zoodles' and sauce. Stir in the chopped fresh parsley. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper, or to taste.
- Serve immediately. Top with grated Parmesan cheese if desired.
Notes
If you don't have a spiralizer, you can use pre-packaged zucchini noodles from the produce section or thin spaghetti pasta instead. Adjust the cooking time for the zoodles to your preferred texture.
