Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the salmon fillets on the prepared baking sheet. In a small bowl, whisk together the olive oil, minced garlic, juice from half a lemon, and dried oregano. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  3. Pour the mixture over the salmon, ensuring each fillet is coated. Top each fillet with a lemon slice.
  4. Bake for 12-18 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. While the salmon bakes, steam the fresh green beans in a pot with about 1 inch of boiling water, or in the microwave, for 5-7 minutes until tender-crisp. Season with 1/4 teaspoon salt and 1/4 teaspoon black pepper.
  6. Prepare the microwave brown rice according to package directions.
  7. Serve the baked salmon immediately with the steamed green beans and microwave brown rice.

Notes

Ensure you don't overcook the salmon to keep it moist and flaky. Cooking times can vary based on thickness.
