Ingredients
- 8 ounce spaghetti

- 1 cup cherry tomatoes (halved)

Instructions
- Bring a large pot of salted water to a rolling boil. Add 8 ounces of spaghetti and cook according to package directions until al dente.
- While pasta cooks, in a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant, being careful not to burn.
- Stir in 1/4 cup of lemon juice and 1/2 cup of vegetable broth. Bring to a gentle simmer. Cook for 2-3 minutes, allowing the sauce to reduce slightly.
- Add the halved cherry tomatoes and fresh spinach to the skillet. Cook for 2-3 minutes, until spinach is wilted and tomatoes are slightly softened.
- Drain the cooked spaghetti, reserving about 1/4 cup of the pasta water. Add the spaghetti directly to the skillet with the sauce. Toss well to coat. If the sauce is too thick, add a splash of reserved pasta water.
- Season the pasta with salt and black pepper to taste. Garnish with chopped fresh parsley if desired.
- Prepare the bagged Caesar salad kit according to package instructions, ensuring any dressing included is vegan or substituting with a vegan alternative.
- Serve the Lemon Garlic Pasta hot with the Caesar salad on the side.
