  1. Bring a large pot of salted water to a rolling boil. Add 8 ounces of spaghetti and cook according to package directions until al dente.
  2. While pasta cooks, in a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant, being careful not to burn.
  3. Stir in 1/4 cup of lemon juice and 1/2 cup of vegetable broth. Bring to a gentle simmer. Cook for 2-3 minutes, allowing the sauce to reduce slightly.
  4. Add the halved cherry tomatoes and fresh spinach to the skillet. Cook for 2-3 minutes, until spinach is wilted and tomatoes are slightly softened.
  5. Drain the cooked spaghetti, reserving about 1/4 cup of the pasta water. Add the spaghetti directly to the skillet with the sauce. Toss well to coat. If the sauce is too thick, add a splash of reserved pasta water.
  6. Season the pasta with salt and black pepper to taste. Garnish with chopped fresh parsley if desired.
  7. Prepare the bagged Caesar salad kit according to package instructions, ensuring any dressing included is vegan or substituting with a vegan alternative.
  8. Serve the Lemon Garlic Pasta hot with the Caesar salad on the side.
