Ingredients
- 1 pound sirloin steak (thinly sliced)
- 1 teaspoon olive oil
- 2 clove garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 2 cup broccoli florets
- 0.5 cup low-sodium tamari (low-sodium)
- 1 tablespoon apple cider vinegar
- 0.5 teaspoon erythritol
- 0.25 teaspoon black pepper
- 1 cauliflower (large, riced)
Instructions
- In a small bowl, whisk together the low-sodium tamari, apple cider vinegar, erythritol, and black pepper to create the stir-fry sauce. Set aside.
- Heat 1 teaspoon olive oil in a large skillet or wok over medium-high heat. Add the thinly sliced sirloin steak and cook for 2-3 minutes until browned on all sides. Remove the beef from the skillet and set aside.
- Add the minced garlic and grated fresh ginger to the same skillet. Sauté for 30 seconds until fragrant.
- Add the broccoli florets to the skillet and stir-fry for 3-5 minutes, until tender-crisp. If needed, add 1-2 tablespoons of water to create steam and help cook the broccoli.
- Return the cooked beef to the skillet with the broccoli. Pour the stir-fry sauce over everything. Toss well to coat and cook for 1-2 minutes until the sauce has thickened slightly and the beef is heated through.
- While the stir-fry cooks, prepare the cauliflower rice. In a separate microwave-safe bowl, microwave the riced cauliflower for 3-5 minutes, or until tender. Alternatively, steam it on the stovetop.
- Serve the lean beef and broccoli stir-fry immediately over the prepared cauliflower rice.
Notes
For best texture, serve immediately. Cauliflower rice can be prepped in advance.
