  1. In a small bowl, whisk together the low-sodium tamari, apple cider vinegar, erythritol, and black pepper to create the stir-fry sauce. Set aside.
  2. Heat 1 teaspoon olive oil in a large skillet or wok over medium-high heat. Add the thinly sliced sirloin steak and cook for 2-3 minutes until browned on all sides. Remove the beef from the skillet and set aside.
  3. Add the minced garlic and grated fresh ginger to the same skillet. Sauté for 30 seconds until fragrant.
  4. Add the broccoli florets to the skillet and stir-fry for 3-5 minutes, until tender-crisp. If needed, add 1-2 tablespoons of water to create steam and help cook the broccoli.
  5. Return the cooked beef to the skillet with the broccoli. Pour the stir-fry sauce over everything. Toss well to coat and cook for 1-2 minutes until the sauce has thickened slightly and the beef is heated through.
  6. While the stir-fry cooks, prepare the cauliflower rice. In a separate microwave-safe bowl, microwave the riced cauliflower for 3-5 minutes, or until tender. Alternatively, steam it on the stovetop.
  7. Serve the lean beef and broccoli stir-fry immediately over the prepared cauliflower rice.

Notes

For best texture, serve immediately. Cauliflower rice can be prepped in advance.
