Ingredients
- 1.5 pound ground beef (lean)
- 1 tablespoon avocado oil
- 1 yellow onion (medium, finely chopped)
- 1 cup beef broth
- 1 teaspoon dried thyme
- 0.5 teaspoon dried rosemary (crushed)
- 0.25 cup heavy cream
- 2 pound russet potatoes (peeled and quartered)
- 0.25 cup milk
- 2 tablespoon butter
- 0.5 cup shredded cheddar cheese
- 0.25 teaspoon black pepper
- 1 teaspoon salt
Instructions
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
- In a large skillet, heat the avocado oil over medium-high heat. Add the yellow onion and cook until softened, about 5 minutes.
- Add the ground beef to the skillet with the yellow onion. Cook, breaking up the beef with a spoon, until browned. Drain any excess grease.
- Stir in the beef broth, dried thyme, dried rosemary, and 1/4 teaspoon of salt to the ground beef mixture. Bring to a simmer and cook for 5 minutes, allowing flavors to meld.
- Stir in the heavy cream and cook for another 2 minutes. Pour the ground beef mixture into the prepared baking dish and spread evenly.
- Meanwhile, place the peeled and quartered russet potatoes in a large pot and cover with cold water. Add 1/2 teaspoon of salt. Bring to a boil and cook until very tender, about 15-20 minutes. Drain well.
- Return the drained potatoes to the hot pot. Add the milk and butter. Mash until smooth. Season with 1/4 teaspoon of salt and black pepper.
- Carefully spread the mashed potatoes evenly over the ground beef mixture. Sprinkle with shredded cheddar cheese.
- Bake for 20-25 minutes, or until the top is golden brown and the filling is bubbly. Let stand for 5 minutes before serving.
Notes
Leftovers store well in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.
