Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  2. In a large skillet, heat the avocado oil over medium-high heat. Add the yellow onion and cook until softened, about 5 minutes.
  3. Add the ground beef to the skillet with the yellow onion. Cook, breaking up the beef with a spoon, until browned. Drain any excess grease.
  4. Stir in the beef broth, dried thyme, dried rosemary, and 1/4 teaspoon of salt to the ground beef mixture. Bring to a simmer and cook for 5 minutes, allowing flavors to meld.
  5. Stir in the heavy cream and cook for another 2 minutes. Pour the ground beef mixture into the prepared baking dish and spread evenly.
  6. Meanwhile, place the peeled and quartered russet potatoes in a large pot and cover with cold water. Add 1/2 teaspoon of salt. Bring to a boil and cook until very tender, about 15-20 minutes. Drain well.
  7. Return the drained potatoes to the hot pot. Add the milk and butter. Mash until smooth. Season with 1/4 teaspoon of salt and black pepper.
  8. Carefully spread the mashed potatoes evenly over the ground beef mixture. Sprinkle with shredded cheddar cheese.
  9. Bake for 20-25 minutes, or until the top is golden brown and the filling is bubbly. Let stand for 5 minutes before serving.

Notes

Leftovers store well in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.
