Layered Beef Enchilada Bake

  1. Preheat oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish.
  2. Heat olive oil in a large skillet over medium-high heat. Add chopped yellow onion and cook for 3-4 minutes until softened. Add ground beef and cook, breaking it up, until browned. Drain off any excess grease.
  3. Stir in chili powder, ground cumin, garlic powder, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper. Cook for 1 minute until fragrant. Stir in 1/2 cup water and simmer for 5 minutes, allowing flavors to meld.
  4. Pour 1/2 of the enchilada sauce into the bottom of the prepared baking dish.
  5. Spread a thin layer of the beef mixture onto each corn tortilla, roll it up, and place seam-side down in the baking dish. Repeat with remaining tortillas and beef.
  6. Pour the remaining red enchilada sauce over the rolled tortillas. Sprinkle generously with shredded cheddar cheese.
  7. Bake for 20-25 minutes, or until the cheese is bubbly and lightly browned. Meanwhile, prepare the Spanish rice according to package directions.
  8. Remove from oven and let stand for 5 minutes before serving. Serve with Spanish rice, mixed greens, and a dollop of sour cream if desired.
