- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 sweet potato (peeled and diced into 1/2-inch cubes)
- 1 bell pepper (diced)
- 0.5 yellow onion (diced)
- 1.5 teaspoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 can black beans (rinsed and drained)
- 0.25 cup fresh cilantro (chopped)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground turkey and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat and set aside.
- To the same skillet (no need to clean), add the diced sweet potato, bell pepper, and yellow onion. Cook for 5-7 minutes, stirring occasionally, until vegetables begin to soften.
- Stir in 1 1/2 teaspoons chili powder, 1 teaspoon ground cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute until fragrant.
- Return the cooked ground turkey to the skillet. Add 1 (15-ounce) can black beans. Stir everything together and cook for another 3-5 minutes, allowing flavors to meld and sweet potatoes to become tender.
- Serve the skillet mixture warm, garnished with chopped fresh cilantro if desired.
Notes
This dish is also great with a squeeze of lime juice just before serving for an extra burst of freshness. Leftovers store well for a few days.
