Ingredients
- 1 pound ground turkey (93% lean)
- 1.5 cup jasmine rice (uncooked)
- 3 cup water
- 1 tablespoon avocado oil
- 3 tablespoon fish sauce
- 3 tablespoon lime juice (freshly squeezed)
- 1 tablespoon maple syrup (pure)
- 0.5 cup fresh mint (chopped)
- 0.5 cup scallion greens (green tops only, chopped)
- 2 English cucumbers (thinly sliced)
- 1 cup carrots (shredded)
- 0.5 teaspoon red pepper flakes
Instructions
- Combine jasmine rice and 3 cups of water in a medium saucepan over medium-high heat. Bring to a boil, reduce heat to low, cover tightly with a lid, and cook for 15 minutes until liquid is fully absorbed and rice is tender. Remove from heat and let sit covered for 5 minutes.
- Heat avocado oil in a large skillet over medium heat. Add ground turkey and cook for 7 to 8 minutes, breaking it into fine crumbles with a wooden spoon, until cooked through and an internal temperature reaches 165 degrees F.
- Remove skillet from heat. Stir in 2 tablespoons of fish sauce, 2 tablespoons of lime juice, maple syrup, red pepper flakes, chopped scallion greens, and fresh mint, tossing until thoroughly coated and fragrant.
- Toss sliced English cucumbers and shredded carrots in a medium bowl with the remaining 1 tablespoon of lime juice and remaining 1 tablespoon of fish sauce.
- Fluff jasmine rice with a fork and divide among bowls, topping with the warm seasoned turkey and the crisp cucumber carrot salad.
Notes
Low-FODMAP safety: use only the dark green parts of the scallions and ensure pure maple syrup is used as the natural sweetener.
