  1. Heat vegetable oil in a large Dutch oven over medium-high heat. Add sliced yellow onions and cook for 10 minutes until deeply browned.
  2. Stir in minced garlic and minced fresh ginger. Add lamb shoulder pieces and cook for 6 minutes until lightly browned on all sides.
  3. In a bowl, whisk 1 cup of plain yogurt with ground cardamom, ground cumin, paprika, and 1 1/2 teaspoons salt.
  4. Reduce heat to low and gradually stir spiced yogurt into the Dutch oven. Add 1 cup water, cover tightly, and simmer gently for 45 minutes until lamb is tender.
  5. While lamb simmers, prepare saffron rice: soak saffron threads in 2 tablespoons warm water for 5 minutes. Combine basmati rice, remaining 2 1/2 cups water, saffron liquid, and 1/2 teaspoon salt in a saucepan. Bring to a boil, cover, reduce heat, and cook for 15 minutes.
  6. Prepare raita: squeeze excess moisture from grated English cucumber and stir into remaining 1/2 cup plain yogurt.
  7. Serve braised lamb rogan josh warm alongside saffron pilaf and cool cucumber raita.

Notes

Whisking yogurt before adding prevents curdling when mixed into hot cooking liquid.
