Ingredients
- 2 pound lamb shoulder (boneless, cut into 1.5-inch cubes)
- 1.5 cup plain yogurt
- 2 tablespoon vegetable oil
- 2 yellow onions (medium, sliced thin)
- 4 clove garlic (minced)
- 1 tablespoon fresh ginger (minced)
- 1 teaspoon ground cardamom
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 2 teaspoon salt
- 2 cup basmati rice (uncooked)
- 3.5 cup water
- 1 pinch saffron threads
- 1 English cucumber (grated)
Instructions
- Heat vegetable oil in a large Dutch oven over medium-high heat. Add sliced yellow onions and cook for 10 minutes until deeply browned.
- Stir in minced garlic and minced fresh ginger. Add lamb shoulder pieces and cook for 6 minutes until lightly browned on all sides.
- In a bowl, whisk 1 cup of plain yogurt with ground cardamom, ground cumin, paprika, and 1 1/2 teaspoons salt.
- Reduce heat to low and gradually stir spiced yogurt into the Dutch oven. Add 1 cup water, cover tightly, and simmer gently for 45 minutes until lamb is tender.
- While lamb simmers, prepare saffron rice: soak saffron threads in 2 tablespoons warm water for 5 minutes. Combine basmati rice, remaining 2 1/2 cups water, saffron liquid, and 1/2 teaspoon salt in a saucepan. Bring to a boil, cover, reduce heat, and cook for 15 minutes.
- Prepare raita: squeeze excess moisture from grated English cucumber and stir into remaining 1/2 cup plain yogurt.
- Serve braised lamb rogan josh warm alongside saffron pilaf and cool cucumber raita.
Notes
Whisking yogurt before adding prevents curdling when mixed into hot cooking liquid.
