  1. First, prepare your rice. Combine 1/2 cup white rice and 1 cup water in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until all the water is absorbed. Remove from heat and let stand, covered, for 5 minutes.
  2. While rice cooks, make the cucumber salad: In a small bowl, combine 0.5 thinly sliced Persian cucumber, 1 teaspoon rice vinegar, and a pinch of salt. Toss gently and set aside.
  3. Heat 1/2 teaspoon olive oil in a small skillet over medium-high heat. Add 4 ounces ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
  4. Drain any excess fat from the turkey. Add 0.25 chopped yellow onion, 0.5 minced garlic clove, and 1/4 teaspoon grated fresh ginger to the skillet. Sauté for 2-3 minutes until fragrant and onion softens.
  5. Stir in 1 1/2 tablespoons low-sodium soy sauce, 1/2 tablespoon brown sugar, and 1/4 teaspoon sesame oil. Cook for 1-2 minutes, stirring to coat the turkey in the sauce.
  6. Serve the Korean-style ground turkey mixture over the cooked white rice, with the cucumber salad on the side.

Notes

You can add a sprinkle of sesame seeds over the turkey or cucumber salad for extra garnish if desired.
