  1. In a medium bowl, whisk together the low-sodium tamari, apple cider vinegar, 1/2 tablespoon sesame oil, 3 cloves minced garlic, 1 tablespoon grated fresh ginger, 1/4 teaspoon black pepper, and 1/2 teaspoon erythritol. This is your marinade.
  2. Heat a large non-stick skillet or wok over medium-high heat. Add the extra lean ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 7-9 minutes. Drain any excess liquid.
  3. Pour the marinade over the cooked turkey in the skillet. Stir well to coat and cook for 2-3 minutes, allowing the sauce to thicken slightly. Remove from heat.
  4. While the turkey cooks, prepare the Quick Kimchi Slaw. In a medium bowl, combine the pre-shredded coleslaw mix. In a small bowl, whisk together the rice vinegar, 1 teaspoon toasted sesame oil, 1 teaspoon minced fresh ginger, and 1/4 teaspoon sriracha. Pour the dressing over the coleslaw mix and toss to combine.
  5. Separate the leaves from the head of butter lettuce. Serve the Korean spiced turkey in the butter lettuce cups, topped with a spoonful of the Quick Kimchi Slaw. Portion remaining turkey and slaw into airtight containers for meal prep.

Notes

Lettuce cups are best assembled fresh to prevent sogginess. Store the cooked turkey filling and slaw separately for meal prep.
