Ingredients
- 2 tablespoon olive oil
- 1 pound ground pork
- 0.5 yellow onion (chopped)
- 2 clove garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 0.25 cup soy sauce
- 2 tablespoon maple syrup
- 3 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 0.5 teaspoon red pepper flakes
- 1 head red cabbage (shredded)
- 1 teaspoon sugar
- 10 butter lettuce leaves
- 2 tablespoon sesame seeds
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper (freshly ground)
Instructions
- In a medium bowl, combine 1/4 cup soy sauce, 2 tablespoons maple syrup, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, and 1/2 teaspoon red pepper flakes (if using). Whisk well and set aside.
- For the slaw, combine 1 shredded red cabbage, 2 tablespoons rice vinegar, 1 tablespoon olive oil, and 1 teaspoon sugar in a separate bowl. Season with 1/4 teaspoon kosher salt and a pinch of black pepper. Toss to combine and set aside.
- Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add 1 pound ground pork and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat.
- Add 0.5 chopped yellow onion to the skillet and cook for 3 minutes until softened. Stir in 2 minced garlic cloves and 1 tablespoon grated fresh ginger, and cook for 1 minute until fragrant.
- Pour the prepared sauce mixture into the skillet with the pork and vegetables. Bring to a simmer and cook for 2-3 minutes, stirring, until the sauce thickens slightly and coats the pork.
- Taste the pork mixture and adjust seasoning with remaining kosher salt and black pepper as needed.
- Serve the Korean pork in butter lettuce leaves or warm flour tortillas, topped with the red cabbage slaw and an optional sprinkle of 2 tablespoons sesame seeds.
Notes
Ground chicken or turkey can be substituted for pork. Adjust red pepper flakes to desired spice level. Leftover pork mixture is great for rice bowls or wraps.
