  1. Prepare the sauce by whisking together the low-sodium tamari, rice vinegar, and sesame oil in a small bowl. Set aside.
  2. Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add the 96% lean ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add the sliced yellow onion, minced garlic, and grated fresh ginger to the skillet. Stir-fry for 2-3 minutes until fragrant.
  4. Add the broccoli florets, thinly sliced green bell pepper, and julienned zucchini to the skillet. Continue to stir-fry for 5-7 minutes, until the vegetables are tender-crisp.
  5. Pour the prepared sauce over the beef and vegetables. Add red pepper flakes, if using. Stir well to coat everything and cook for another 1-2 minutes until the sauce has slightly thickened.
  6. Remove from heat and serve immediately. Garnish with chopped green onions, if desired.

Notes

For even lower carb, omit the yellow onion. Adjust red pepper flakes to your preferred spice level.
