Instructions
- Cook the white rice according to package directions. While rice cooks, prepare other ingredients.
- In a small bowl, whisk together the soy sauce, honey, sesame oil, minced garlic, grated fresh ginger, and rice vinegar to make the sauce.
- Heat the olive oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken breast and stir-fry for 3-4 minutes until lightly browned and cooked through. Remove chicken from the skillet and set aside.
- Add the thinly sliced red bell pepper and julienned carrot to the same skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
- Return the cooked chicken breast to the skillet with the vegetables. Pour the prepared sauce over the chicken and vegetables. Toss to coat evenly and cook for 1-2 minutes until the sauce has slightly thickened.
- Serve the chicken and vegetable mixture over the cooked white rice. Garnish with sliced green onion and sesame seeds, if desired.
