  1. Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add the 1 1/2 pounds ground beef and 1/2 cup diced yellow onion. Cook, breaking up the beef, until browned, about 6-8 minutes.
  2. Drain any excess fat. Stir in 3 cloves minced garlic and 1 tablespoon freshly grated ginger and cook for 1 minute until fragrant.
  3. In a small bowl, whisk together 1/2 cup low-sodium soy sauce, 1/4 cup brown sugar, 1 tablespoon sesame oil, and 1/2 teaspoon black pepper.
  4. Pour the sauce over the beef mixture in the skillet. Bring to a simmer and cook for 3-5 minutes, stirring occasionally, until the sauce slightly thickens and coats the beef.
  5. While the beef simmers, prepare the 2 cups instant white rice according to package directions using 2 cups water.
  6. Divide the prepared instant white rice among 7 bowls. Top with the Korean ground beef and garnish generously with sliced green onions.
  7. Serve immediately.
