- 2 tablespoon sesame oil
- 6 clove garlic (minced)
- 1 tablespoon fresh ginger (grated)

- 18 ounce riced cauliflower (cooked according to package directions)
- 4 ounce radishes (thinly sliced)
- 0.25 cup rice vinegar
- 0.5 teaspoon sugar-free sweetener
- 3 tablespoon fresh cilantro (chopped)
Instructions
- Prepare the quick pickled radish: In a small bowl, combine sliced radishes, rice vinegar, and 1/2 teaspoon sugar-free sweetener. Stir and let sit while you prepare the rest of the meal.
- Heat sesame oil in a large skillet over medium-high heat. Add ground beef and break it apart with a spoon. Cook for 5-7 minutes until browned, then drain any excess fat.
- Add minced garlic and grated fresh ginger to the skillet. Cook for 1 minute until fragrant.
- Stir in the low-sodium soy sauce (or tamari), apple cider vinegar, 1 tablespoon sugar-free sweetener, and black pepper. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to thicken slightly and coat the beef.
- While the beef cooks, prepare the riced cauliflower according to package directions.
- Divide the cooked riced cauliflower among 6 bowls. Top generously with the Korean ground beef. Garnish with chopped fresh cilantro and the quick-pickled radishes.
Notes
If you don't have fresh ginger, you can use 1/2 teaspoon ground ginger, but fresh is preferred for flavor.
