  1. Prepare the quick pickled radish: In a small bowl, combine sliced radishes, rice vinegar, and 1/2 teaspoon sugar-free sweetener. Stir and let sit while you prepare the rest of the meal.
  2. Heat sesame oil in a large skillet over medium-high heat. Add ground beef and break it apart with a spoon. Cook for 5-7 minutes until browned, then drain any excess fat.
  3. Add minced garlic and grated fresh ginger to the skillet. Cook for 1 minute until fragrant.
  4. Stir in the low-sodium soy sauce (or tamari), apple cider vinegar, 1 tablespoon sugar-free sweetener, and black pepper. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to thicken slightly and coat the beef.
  5. While the beef cooks, prepare the riced cauliflower according to package directions.
  6. Divide the cooked riced cauliflower among 6 bowls. Top generously with the Korean ground beef. Garnish with chopped fresh cilantro and the quick-pickled radishes.

Notes

If you don't have fresh ginger, you can use 1/2 teaspoon ground ginger, but fresh is preferred for flavor.
