- 8 boneless pork chops (1-inch thick)
- 0.5 cup soy sauce
- 0.25 cup brown sugar
- 2 tablespoon sesame oil
- 2 tablespoon rice vinegar
- 6 clove garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 1 tablespoon gochujang
- 2 cup white rice (uncooked)
- 1.5 cup kimchi
- 0.25 cup green onions (chopped)
Instructions
- In a shallow dish or large Ziploc bag, whisk together the soy sauce, brown sugar, sesame oil, rice vinegar, minced garlic, grated fresh ginger, and gochujang. Add pork chops, turning to coat. Marinate for at least 30 minutes at room temperature, or up to 4 hours in the refrigerator.
- While pork marinates, prepare white rice according to package directions. Keep warm.
- Preheat grill to medium-high heat (about 400°F / 200°C). Lightly oil the grill grates.
- Remove pork chops from marinade, letting excess drip off. Discard remaining marinade.
- Grill pork chops for 4-6 minutes per side, or until cooked through and nicely charred, reaching an internal temperature of 145°F (63°C).
- Remove pork chops from grill and let rest for 5 minutes before slicing or serving whole. Serve with cooked white rice and a side of kimchi. Garnish with chopped green onions, if desired.
Notes
Marinating the pork chops for at least 30 minutes is key for maximum flavor. For easy cleanup, use a grill pan or cast-iron skillet on the grill.
