Instructions

  1. In a small bowl, whisk together the gochujang paste, low-sodium soy sauce, maple syrup, minced garlic, grated ginger, and 1/3 cup water.
  2. Heat toasted sesame oil in a large skillet over medium-high heat. Arrange the extra-firm tofu slabs in a single layer and pan-fry for 4 to 5 minutes per side until nicely browned.
  3. Pour the gochujang braising liquid over the tofu slabs. Reduce heat to medium-low and simmer for 4 to 5 minutes, spooning the sauce over the tofu until reduced to a glossy glaze.
  4. In the last 2 minutes of simmering, add the thawed shelled edamame and baby spinach to the edges of the pan, covering briefly to allow spinach to wilt.
  5. Heat the pouches of pre-cooked brown rice in the microwave for 90 seconds each. Divide rice among bowls, top with braised tofu, edamame, and wilted spinach, then garnish with toasted sesame seeds.

Notes

Gochujang delivers moderate warmth with natural fermented sweetness without requiring any cumin.
