Instructions

  1. Combine 1/2 cup white rice and 1 cup water in a small saucepan. Bring to a boil over high heat, then cover with a tight-fitting lid, reduce heat to low, and simmer for 15 minutes until tender.
  2. In a small bowl, whisk together gochujang, low-sodium soy sauce, honey, toasted sesame oil, minced garlic, and grated ginger until smooth.
  3. Heat 1 teaspoon vegetable oil in a large nonstick skillet or wok over medium-high heat. Add the diced chicken breast and the white parts of the green onions, stir-frying for 4 minutes until the chicken is lightly browned.
  4. Add the sliced zucchini and chopped red bell pepper to the skillet. Stir-fry for 3 minutes until the vegetables are crisp-tender and the chicken is fully cooked through.
  5. Pour the gochujang sauce mixture into the skillet and toss vigorously for 1 to 2 minutes until the sauce bubbles, thickens, and evenly coats the chicken and vegetables.
  6. Fluff the cooked rice with a fork and divide between 2 meal bowls. Spoon the spicy chicken and vegetable mixture over the rice, then garnish with the green onion tops and optional sesame seeds.
