Ingredients
- 1 pound ground beef (lean)
- 1 tablespoon sesame oil
- 2 clove garlic (minced)
- 1 teaspoon fresh ginger (grated)
- 0.25 cup soy sauce (low-sodium)
- 2 tablespoon brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha
- 1 cup brown rice
- 2 cup water
- 3 cup coleslaw mix (pre-shredded)
- 0.25 cup kimchi (chopped)
- 2 tablespoon mayonnaise
- 1 tablespoon lime juice
- 1 tablespoon toasted sesame seeds
Instructions
- In a medium saucepan, combine the brown rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until all water is absorbed. Fluff with a fork.
- While the rice cooks, heat the sesame oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add the minced garlic and grated fresh ginger to the skillet with the beef and cook for 1 minute until fragrant.
- Stir in the low-sodium soy sauce, brown sugar, rice vinegar, and sriracha (if using). Bring to a gentle simmer and cook for 2-3 minutes, allowing the sauce to thicken slightly and coat the beef.
- In a separate medium bowl, combine the pre-shredded coleslaw mix, chopped kimchi, mayonnaise, and lime juice. Toss well to create the kimchi slaw.
- Serve the Korean beef mixture over the brown rice, topped with a generous portion of kimchi slaw and a sprinkle of toasted sesame seeds, if desired.
Notes
To further speed up dinner, you can use microwaveable pre-cooked brown rice or cook the rice ahead of time.
