  1. Cook 1 1/2 cups jasmine rice with 2 cups water according to package directions or in a rice cooker. While rice cooks, prepare the beef and cucumbers.
  2. In a small bowl, whisk together 2 tablespoons rice vinegar, 1 cup hot water, and 1/4 teaspoon salt. Add 1 thinly sliced English cucumber to the liquid and let sit while you prepare the beef.
  3. Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat. Add 1 pound ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  4. In a small bowl, whisk together 1/2 cup soy sauce, 2 tablespoons brown sugar, 1 tablespoon grated fresh ginger, 2 cloves minced garlic, and 1/2 teaspoon black pepper.
  5. Pour the sauce over the cooked beef and stir to coat. Simmer for 3-5 minutes, allowing the sauce to thicken slightly and flavors to meld.
  6. Serve the Korean beef mixture over cooked jasmine rice, topped with the quick-pickled cucumbers. Garnish with toasted sesame seeds if desired.

Notes

For a spicier kick, add 1/2 teaspoon gochujang (Korean chili paste) to the sauce mixture.
