- 0.25 cup all-purpose flour

- 1 cup green onions (thinly sliced (white and green parts))
- 0.5 cup walnuts (chopped)
- 0.25 cup dried barberries (rinsed)
- 0.25 cup vegetable oil
- 2 cup plain Greek yogurt
- 1 cucumber (large, peeled, seeded, and diced)
- 0.25 cup fresh mint (chopped)
- 1 whole Barbari bread (warmed)
Instructions
- Preheat oven to 350°F. Lightly grease a 9-inch oven-safe skillet or baking dish with vegetable oil.
- In a large bowl, whisk together the large eggs. Add the all-purpose flour, baking powder, ground turmeric, 1 teaspoon salt, and 1/2 teaspoon black pepper. Whisk until well combined.
- Stir in the finely chopped fresh parsley, fresh cilantro, fresh dill, thinly sliced green onions, chopped walnuts, and rinsed dried barberries. Mix thoroughly until all herbs are evenly distributed in the egg mixture.
- Pour the mixture into the prepared skillet or baking dish. Bake for 35-40 minutes, or until the kookoo is set in the center and lightly golden brown on top. A toothpick inserted into the center should come out clean.
- While the Kookoo Sabzi bakes, prepare the Mast-o Khiar: In a medium bowl, combine the plain Greek yogurt, diced cucumber, and chopped fresh mint. Season with salt and black pepper to taste. Mix well and refrigerate until serving.
- Once baked, let the Kookoo Sabzi cool slightly before slicing into wedges. Serve warm or at room temperature with the Mast-o Khiar and warmed Barbari bread.
Notes
Kookoo Sabzi can be enjoyed warm or cold, making it excellent for leftovers or lunch. For extra richness, you can briefly pan-fry the kookoo in a little oil on the stovetop for a crispy bottom before baking.
