- 1 yellow onion (medium, chopped)
- 2 carrots (peeled and sliced)
- 2 celery stalks (sliced)
- 3 clove garlic (minced)
- 1 sweet potato (medium, peeled and diced)
- 1 can crushed tomatoes (28 ounce)
- 2 can kidney beans (15 ounce, rinsed and drained)
- 4 cup vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 0.5 teaspoon black pepper
- 0.5 teaspoon salt
- 0.5 cup fresh parsley (chopped, for garnish)
- 4 slice whole grain bread (for serving)
Instructions
- Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add chopped yellow onion, sliced carrots, and sliced celery. Sauté for 8-10 minutes until vegetables are softened.
- Stir in minced garlic, diced sweet potato, dried thyme, smoked paprika, black pepper, and salt. Cook for another 2 minutes until fragrant.
- Add crushed tomatoes, rinsed and drained kidney beans, and vegetable broth. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until the sweet potato is tender and flavors have melded.
- Taste and adjust seasoning if necessary. Serve hot with a sprinkle of fresh parsley (optional) and whole grain bread on the side.
Notes
This stew freezes well, making it a great option for meal prep. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave.
