  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add chopped yellow onion, sliced carrots, and sliced celery. Sauté for 8-10 minutes until vegetables are softened.
  2. Stir in minced garlic, diced sweet potato, dried thyme, smoked paprika, black pepper, and salt. Cook for another 2 minutes until fragrant.
  3. Add crushed tomatoes, rinsed and drained kidney beans, and vegetable broth. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until the sweet potato is tender and flavors have melded.
  4. Taste and adjust seasoning if necessary. Serve hot with a sprinkle of fresh parsley (optional) and whole grain bread on the side.

Notes

This stew freezes well, making it a great option for meal prep. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave.
