- 1.5 pound pork chop (bone-in)
- 2 tablespoon fresh ginger (finely grated)
- 3 clove garlic (minced)
- 0.5 teaspoon cayenne pepper
- 0.5 teaspoon ground nutmeg
- 0.5 teaspoon ground cloves
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 3 tablespoon vegetable oil
- 1.5 pound sweet potato (peeled and cut into wedges)
- 0.5 head green cabbage (sliced)
Instructions
- Preheat oven to 400°F (200°C). Toss sweet potato wedges with 1 tablespoon vegetable oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Spread on a baking sheet and roast for 25 minutes until tender and browned.
- In a small bowl, combine finely grated fresh ginger, minced garlic, 1/2 teaspoon cayenne pepper, 1/2 teaspoon ground nutmeg, 1/2 teaspoon ground cloves, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to form a spice paste. Rub paste evenly over pork chops.
- Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add pork chops and sear for 5 to 6 minutes per side until internal temperature reaches 145°F. Remove pork chops and let rest.
- In the same skillet, heat remaining 1 tablespoon vegetable oil over medium heat. Add sliced green cabbage and remaining 1/4 teaspoon salt. Sauté for 6 to 8 minutes until tender-crisp.
- Serve spiced pork chops with roasted sweet potato wedges and warm sautéed cabbage on the side.
