- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger
- 0.5 teaspoon ground cardamom
- 0.5 teaspoon kosher salt
- 0.25 cup fresh cilantro (chopped)
Instructions
- Combine basmati rice with 3 cups water in a medium saucepan, bring to a boil, cover, and cook on low heat for 15 minutes until tender.
- Heat avocado oil in a large Dutch oven over medium heat, add sliced carrots, and stir for 3 minutes.
- Add ground turmeric, ground cumin, ground ginger, and ground cardamom, stirring constantly for 30 seconds until fragrant.
- Pour in diced tomatoes with their juices, drained chickpeas, diced zucchini, kosher salt, and 1 cup of water; bring to a gentle simmer.
- Cover and simmer for 15 minutes until vegetables are tender and sauce has thickened slightly; garnish with fresh cilantro and serve over basmati rice.
