Instructions

  1. Season chicken breasts evenly with garlic powder, onion powder, paprika, salt, and black pepper. Pound chicken slightly to an even 1/2-inch thickness for quicker cooking.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add seasoned chicken breasts and cook for 4-6 minutes per side, or until cooked through and no longer pink in the center. The precise cooking time will vary depending on the thickness of the chicken.
  3. While chicken cooks, prepare coleslaw: in a medium bowl, whisk together mayonnaise, apple cider vinegar, and sugar. Add bagged coleslaw mix and toss to coat. For an optimal coleslaw texture, chill briefly before serving.
  4. Once chicken is cooked, reduce heat to low and pour in the BBQ sauce. Turn chicken to coat completely, letting it simmer in the sauce for 1-2 minutes until warmed through and glazed.
  5. Serve the BBQ chicken immediately on toasted hamburger buns, with the creamy coleslaw and a scoop of prepared potato salad on the side.

Notes

To toast the buns, you can place them cut-side down in a dry skillet over medium heat for 1-2 minutes until lightly golden. If you have any extra BBQ sauce, it makes a great dipping sauce.
