Instructions
- If not already done, prepare the white rice according to package directions. Keep warm.
- For the pineapple salsa, combine the diced fresh pineapple, finely diced red onion, chopped fresh cilantro, minced jalapeño (if using), and lime juice in a small bowl. Stir to combine and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the pre-cooked pulled pork, liquid smoke, 1/2 teaspoon salt, and black pepper. Sauté for 5-7 minutes, stirring occasionally, until the pork is heated through and slightly caramelized.
- To assemble the bowls, divide the cooked white rice among 4 serving bowls. Top each with the warm Kalua-style pork, a generous spoonful of pineapple salsa, and a side of mixed salad greens.
Notes
To make this even quicker, use microwaveable rice pouches. For a smoky flavor without liquid smoke, you can use smoked paprika in a pinch.
