  1. If not already done, prepare the white rice according to package directions. Keep warm.
  2. For the pineapple salsa, combine the diced fresh pineapple, finely diced red onion, chopped fresh cilantro, minced jalapeño (if using), and lime juice in a small bowl. Stir to combine and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the pre-cooked pulled pork, liquid smoke, 1/2 teaspoon salt, and black pepper. Sauté for 5-7 minutes, stirring occasionally, until the pork is heated through and slightly caramelized.
  4. To assemble the bowls, divide the cooked white rice among 4 serving bowls. Top each with the warm Kalua-style pork, a generous spoonful of pineapple salsa, and a side of mixed salad greens.

Notes

To make this even quicker, use microwaveable rice pouches. For a smoky flavor without liquid smoke, you can use smoked paprika in a pinch.
