Ingredients
- 2 pound shrimp (large, peeled and deveined)
- 2 tablespoon jerk seasoning
- 1 tablespoon olive oil
- 2 head butter lettuce (leaves separated)
- 2 cup fresh pineapple (finely diced)
- 0.5 red onion (finely diced)
- 1 jalapeno (deseeded and minced)
- 0.25 cup fresh cilantro (chopped)
- 2 tablespoon lime juice
Instructions
- In a medium bowl, toss the shrimp with jerk seasoning until evenly coated.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove from heat.
- In a separate bowl, combine the finely diced fresh pineapple, red onion, minced jalapeno (if using), chopped fresh cilantro, and lime juice to make the pineapple salsa. Stir gently to combine.
- Arrange the separated butter lettuce leaves on a platter. Fill each lettuce cup with a portion of the cooked jerk-spiced shrimp and top with a spoonful of pineapple salsa.
- Serve immediately as wraps.
Notes
If you prefer less heat, omit the jalapeno or use a milder jerk seasoning. These wraps are best served fresh, but ingredients can be prepped ahead of time.
