  1. In a medium bowl, toss the shrimp with jerk seasoning until evenly coated.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove from heat.
  3. In a separate bowl, combine the finely diced fresh pineapple, red onion, minced jalapeno (if using), chopped fresh cilantro, and lime juice to make the pineapple salsa. Stir gently to combine.
  4. Arrange the separated butter lettuce leaves on a platter. Fill each lettuce cup with a portion of the cooked jerk-spiced shrimp and top with a spoonful of pineapple salsa.
  5. Serve immediately as wraps.

Notes

If you prefer less heat, omit the jalapeno or use a milder jerk seasoning. These wraps are best served fresh, but ingredients can be prepped ahead of time.
