  1. Cook the 2 cups brown rice according to package directions. This usually takes about 20-25 minutes. While the rice cooks, prepare the beef and green beans.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  3. Add 1 medium yellow onion to the skillet with the beef and cook until softened, about 3-4 minutes. Stir in 2 cloves minced garlic and 1 tablespoon grated fresh ginger and cook for 1 minute more until fragrant.
  4. Pour in 1/2 cup beef broth, 1/4 cup gluten-free soy sauce, 2 tablespoons mirin, and 1 tablespoon brown sugar. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce slightly thickens.
  5. While the beef simmers, steam 12 ounces green beans until tender-crisp, about 5-7 minutes. You can do this in a steamer basket over boiling water or in the microwave with a splash of water in a covered dish.
  6. To serve, divide the cooked brown rice among four bowls. Top with the Japanese beef mixture and steamed green beans. Garnish with sliced 2 green onions and 1 teaspoon sesame seeds, if desired.

Notes

If you're very short on time, pre-cooked brown rice pouches can be used to further speed up preparation.
