  1. Rinse the white rice thoroughly. In a large saucepan or rice cooker, combine the 3 cups white rice and 6 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed and rice is tender. Keep covered.
  2. While rice cooks, in a large skillet or wide pot, combine the dashi broth, soy sauce, mirin, sake, and granulated sugar. Bring the mixture to a gentle simmer over medium heat.
  3. Add the thinly sliced yellow onion to the simmering sauce. Cook for 3-5 minutes, until the onion softens.
  4. Add the thinly sliced beef to the skillet, separating the slices as you add them. Simmer for 3-5 minutes, stirring gently, until the beef is just cooked through and tender. Be careful not to overcook.
  5. Fluff the rice with a fork. Divide the cooked white rice among 6 large serving bowls. Spoon a generous amount of the beef and onion mixture over each portion of rice.
  6. Garnish each bowl with sliced green onions and a side of quick pickled ginger, if desired, and serve immediately.

Notes

For best results, use very thinly sliced beef. Many Asian markets sell pre-sliced beef ideal for this dish. If you can't find dashi, chicken broth is a suitable substitute.
